Three Bean Salad

Ingredients:

  • 2 cup edamame
  • 1 – 15 oz. can kidney beans, drained
  • 1 – 15 oz. can garbanzo beans, drained
  • ½ cup thinly sliced red onion
  • ½ cup chopped fresh cilantro
  • 1 tsp lime zest
  • ¼ cup lime juice
  • ¼ cup olive oil
  • ½ tsp salt

Preparation:

  • 1. In a medium mixing bowl, combine edamame, kidney beans, garbanzos, onion and cilantro. Toss lightly.
  • 2. In a small bowl, combine olive oil, lime juice, lime zest and salt. Mix well and drizzle over salad. Toss to combine well.
