Ingredients:
- 2 cup edamame
- 1 – 15 oz. can kidney beans, drained
- 1 – 15 oz. can garbanzo beans, drained
- ½ cup thinly sliced red onion
- ½ cup chopped fresh cilantro
- 1 tsp lime zest
- ¼ cup lime juice
- ¼ cup olive oil
- ½ tsp salt
Preparation:
- 1. In a medium mixing bowl, combine edamame, kidney beans, garbanzos, onion and cilantro. Toss lightly.
- 2. In a small bowl, combine olive oil, lime juice, lime zest and salt. Mix well and drizzle over salad. Toss to combine well.
