Stuffed Avocados

Ingredients:

  • 1/2 cup cooked quinoa
  • 1/2 cup of cooked black beans
  • 1/2 red onion chopped in small cubes
  • 1/2 cup of cooked corn
  • 1/2 cup of red bell pepper cut into small cubes
  • 1 handful of finely chopped cilantro or parsley
  • juice of 1 lemon
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 ripe but firm avocados

Preparation:

Fill the hole in the middle of the avocado with the quinoa mixture and serve immediately.

In a bowl, mix the quinoa, beans, corn, red onion, cilantro or parsley, and bell pepper.

Season with lemon juice, olive oil and salt.

Cut the avocados in half and carefully remove them from the skin, discarding the pit as well.
