- Ingredients:
- Rice paper
- shredded cabbage
- purple cabbage
- lettuce leaves washed
- carrot in strips
- red bell pepper in strips
- cilantro
- cucumber
- For the Peanut Sauce:
- ½ cup peanut butter
- 1 cup water
- 1-2 Tbsp soy sauce (or liquid aminos)
- 1-2 cloves of garlic
- 1-2 tsp fresh, grated ginger
- 1-2 tsp sesame oil
- 1-2 Tbsp cane sugar
- 1-2 Tbsp lemon juice
Preparation:
- 1. Cut all vegetables and set aside.
- 2. Fill large wide deep dish with water. Dip each rice paper in water until flexible. Place on cutting board.
- 3. Add one leaf of lettuce in the middle, then add other vegetables.
- 4. Bring sides of rice paper in so they touch and stick together, then roll up.
- Peanut Sauce
- 1. Whisk peanut butter and water together in a medium saucepan on medium heat until smooth.
- 2. Add soy sauce, garlic, ginger, sesame oil, sugar, and lemon juice. Continue whisking until it’s well combined.
- 3. Cool slightly, then serve with rolls.
