Vietnamese Rolls and Peanut Sauce

  • Ingredients:
  • Rice paper
  • shredded cabbage
  • purple cabbage
  • lettuce leaves washed
  • carrot in strips
  • red bell pepper in strips
  • cilantro
  • cucumber
  • For the Peanut Sauce:
  • ½ cup peanut butter
  • 1 cup water
  • 1-2 Tbsp soy sauce (or liquid aminos)
  • 1-2 cloves of garlic
  • 1-2 tsp fresh, grated ginger
  • 1-2 tsp sesame oil
  • 1-2 Tbsp cane sugar
  • 1-2 Tbsp lemon juice

Preparation:

  • 1. Cut all vegetables and set aside.
  • 2. Fill large wide deep dish with water. Dip each rice paper in water until flexible. Place on cutting board.
  • 3. Add one leaf of lettuce in the middle, then add other vegetables.
  • 4. Bring sides of rice paper in so they touch and stick together, then roll up.
  • Peanut Sauce
  • 1. Whisk peanut butter and water together in a medium saucepan on medium heat until smooth.
  • 2. Add soy sauce, garlic, ginger, sesame oil, sugar, and lemon juice. Continue whisking until it’s well combined.
  • 3. Cool slightly, then serve with rolls.
