Ingredients:
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved or quartered
- 1 cup cucumber, diced
- 1 large avocado, diced
- 1/2 cup sliced olives
- Juice of 1 lemon
- 1 tablespoon olive oil
- 1/2 teaspoon salt (or to taste)
Preparation:
Gently mix all the ingredients to avoid mashing the softer ones. Serve immediately.
