Ingredients:
- 1 1/2 cups oats
- 1 cup whole wheat flour
- 1/2 cup raisins (or cranberries, golden raisins, etc.)
- 1/2 cup chopped walnuts
- 1/2 cup chopped almonds
- 1/2 cup pumpkin seeds
- 1/2 cup oil
- 1/2 cup panela honey (or bee honey, maple syrup; I’ve tried all of these and any of them work perfectly!)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
Preparation:
- Preheat the oven to 165°C (330°F).
- Grind the oats in a blender or grinder to make oat flour.
- Mix all the dry ingredients in a bowl.
- In another bowl, mix the honey, oil, and vanilla.
- Combine the two mixtures to form a dough.
- Due to the nuts, the dough will be loose and have a non-compacted texture.
- Shape the dough into balls with your hands, pressing to hold the ingredients together. Place the balls on a baking sheet lined with parchment paper.
- Bake the cookies for 10-12 minutes until they are golden and have a dry appearance.
