Oats and Seeds Cookies

Ingredients:

  • 1 1/2 cups oats
  • 1 cup whole wheat flour
  • 1/2 cup raisins (or cranberries, golden raisins, etc.)
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup oil
  • 1/2 cup panela honey (or bee honey, maple syrup; I’ve tried all of these and any of them work perfectly!)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Preparation:

  1. Preheat the oven to 165°C (330°F).
  2. Grind the oats in a blender or grinder to make oat flour.
  3. Mix all the dry ingredients in a bowl.
  4. In another bowl, mix the honey, oil, and vanilla.
  5. Combine the two mixtures to form a dough.
  6. Due to the nuts, the dough will be loose and have a non-compacted texture.
  7. Shape the dough into balls with your hands, pressing to hold the ingredients together. Place the balls on a baking sheet lined with parchment paper.
  8. Bake the cookies for 10-12 minutes until they are golden and have a dry appearance.
