Not Really Meatloaf

  • Ingredients:
  • ¼ cup potato flour/starch or instant mashed potato flakes mixed
  • ¾ cup warm water
  • 1 cup finely chopped walnuts

  • 1 lb mashed firm tofu
  • 1 Tbsp Bragg Liquid Aminos (use Bragg Coconut Aminos for soy-free option)
  • 2 Tbsp extra-virgin olive oil
  • 1 ½ cups crushed corn flakes
  • 1 small chopped onion

  • 1 tsp Wright’s Liquid Smoke

Preparation:

  • 1. Preheat oven 350°F (177°C).
  • 2. In a sauté pan, sauté onions in water until softened.
  • 3. In a large bowl, mix the cooked onions together with the remainder of the ingredients and spoon into an oiled loaf pan.
  • 4. Press down. Then using a rubber spatula, push loaf away from sides of pan.
  • 5. Cook for approx. 45-50 min.
