Ingredients:
- 4 celery stalks chopped
- 1 onion chopped
- 6 cups water (separated ½ c, 5 c and ½ c)
- ¼ cup chicken style seasoning
- 4 potatoes peeled and cubed
- 3 carrots peeled and sliced
- 1 cup soy curls or TVP
- 2 cups garbanzo beans (with liquid)
- 1 Tbsp nutritional yeast flakes
- 1 tsp salt
- 3 Tbsp chopped fresh parsley
Preparation:
1. In large pot simmer celery, onions, ½ c water and chicken style seasoning until vegetables are tender.
2. Add 5 cups of water, potatoes, carrots and soy curls or TVP to the pot.
3. In blender, mix together garbanzo beans, nutritional yeast, salt and ½ c water until smooth.
4. Stir into pot garbanzo bean mixture.
6. Simmer 20 minutes on medium. If needed, add additional water for desired consistency.
