Ingredients:
- 2 ripe avocados
- 1 small tomato, chopped
- 1 Tbsp lime juice
- 1 tsp olive oil
- ½ green pepper
- 1 tsp fresh cilantro, chopped
- 1 Tbsp lemon juice
- 2 scallions, chopped
- sea salt to taste
Preparation:
- 1. Peel avocados and mash with fork.
- 2. In a food processor blend together mashed avocados and remaining ingredients except cilantro.
- 3. Pour into a bowl and sprinkle cilantro on top.
- 4. Serve as a topping over favorite dish. Makes 2 cups
