Guacamole

Ingredients:

  • 2 ripe avocados                             
  • 1 small tomato, chopped
  • 1 Tbsp lime juice                             
  • 1 tsp olive oil
  • ½ green pepper                                     
  • 1 tsp fresh cilantro, chopped
  • 1 Tbsp lemon juice                       
  • 2 scallions, chopped
  • sea salt to taste

Preparation:

  •  1. Peel avocados and mash with fork.
  •  2. In a food processor blend together mashed avocados and remaining ingredients except cilantro.
  •  3. Pour into a bowl and sprinkle cilantro on top.
  •  4. Serve as a topping over favorite dish.  Makes 2 cups
