Ingredients:
- 1/3 kilogram of chickpeas, soaked for 12 hours and drained
- 1 cup cilantro
- 1 cup parsley
- 5-6 garlic cloves
- 1 red onion
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon paprika
Preparation:
- Place all the ingredients in a food processor and process until everything is finely ground and forms a dough. It will be very crumbly, but that’s normal.
- Heat oil for frying.
- Form small balls with your hands and place the falafels in the hot oil, frying them on all sides until they are golden brown. NOTE: They can also be baked. Place the formed balls on a greased baking sheet and bake for 30-40 minutes or until golden brown.
Falafels can be served with pita bread, hummus, yogurt sauce, tabbouleh salad, or as a side dish with any meal!
