Falafels

Ingredients:

  • 1/3 kilogram of chickpeas, soaked for 12 hours and drained
  • 1 cup cilantro
  • 1 cup parsley
  • 5-6 garlic cloves
  • 1 red onion
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon paprika

Preparation:

  1. Place all the ingredients in a food processor and process until everything is finely ground and forms a dough. It will be very crumbly, but that’s normal.
  2. Heat oil for frying.
  3. Form small balls with your hands and place the falafels in the hot oil, frying them on all sides until they are golden brown. NOTE: They can also be baked. Place the formed balls on a greased baking sheet and bake for 30-40 minutes or until golden brown.

Falafels can be served with pita bread, hummus, yogurt sauce, tabbouleh salad, or as a side dish with any meal!
