Chickpea Salad Sandwich

Ingredients:

  • 2 cups cooked chickpeas, drained
  • 1 celery stalk, finely chopped
  • 1 small red onion, finely chopped
  • Salt to taste
  • 1/2 teaspoon mustard
  • 1/2 cup vegan mayonnaise

Preparation:

  1. In a bowl, mash the chickpeas with a fork until they are crushed but still have some texture.
  2. Add the rest of the ingredients and mix well.
  3. Make sandwiches with the chickpea mixture and lettuce, but you can also add tomato and any other ingredients you like.
