Ingredients:
- 2 cups cooked chickpeas, drained
- 1 celery stalk, finely chopped
- 1 small red onion, finely chopped
- Salt to taste
- 1/2 teaspoon mustard
- 1/2 cup vegan mayonnaise
Preparation:
- In a bowl, mash the chickpeas with a fork until they are crushed but still have some texture.
- Add the rest of the ingredients and mix well.
- Make sandwiches with the chickpea mixture and lettuce, but you can also add tomato and any other ingredients you like.
