Cauliflower Lettuce Wraps

Ingredients:

  • 1/2 fresh cauliflower, cut into 1-inch pieces
  • 2 cups plant-based meat, chopped into small pieces
  • 2 green onions, chopped
  • 1 garlic clove, minced
  • 1 teaspoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon cane sugar or honey
  • 3 tablespoons water
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 8-10 lettuce leaves, washed and dried
  • 1 tablespoon sesame seeds for sprinkling

Preparation:

  1. Mix the water with the cornstarch and set aside.
  2. In a pan, heat the oil, ginger, and garlic and lightly sauté. Add the soy sauce and the water-cornstarch mixture. Stir in the sugar and mix until the sauce thickens and the cornstarch is clarified. Once it reaches a boil, turn off the heat and set aside.
  3. In the same pan, lightly cook the cauliflower pieces in a little water until they are just tender.
  4. Drain the water and add the plant-based meat, mixing well.
  5. Stir in the reserved sauce and mix thoroughly. Add the chopped green onions and turn off the heat.
  6. Spoon the mixture onto lettuce leaves to serve.
