Ingredients:

  • 2-3 heads fresh parsley, chopped
  • 3 medium sized tomatoes, chopped
  • 1 medium white onion, chopped
  • 2-3 green onions, chopped
  • ½ cup dried bulgur
  • 1 cup warm water
  • Dressing
  • 2 ½ Tbsp olive oil
  • juice of two lemons
  • 1 ½ tsp of salt
  • ¼ tsp cinnamon
  • dash of cayenne pepper

Preparation:

  • 1. Chop up parsley, tomato, onion, green onion, and toss in a large bowl.
  • 2. Microwave a cup of water for 1 min. Place bulgur in a bowl and pour hot water over it and let sit for about 5 minutes. Bulgur will absorb the water and expand. 
  • 3. Strain excess water and add to parsley mix. 
  • 4. Add lemon juice, olive oil, salt, and cinnamon, toss well. Enjoy!
