Ingredients:
- 2-3 heads fresh parsley, chopped
- 3 medium sized tomatoes, chopped
- 1 medium white onion, chopped
- 2-3 green onions, chopped
- ½ cup dried bulgur
- 1 cup warm water
- Dressing
- 2 ½ Tbsp olive oil
- juice of two lemons
- 1 ½ tsp of salt
- ¼ tsp cinnamon
- dash of cayenne pepper
Preparation:
- 1. Chop up parsley, tomato, onion, green onion, and toss in a large bowl.
- 2. Microwave a cup of water for 1 min. Place bulgur in a bowl and pour hot water over it and let sit for about 5 minutes. Bulgur will absorb the water and expand.
- 3. Strain excess water and add to parsley mix.
- 4. Add lemon juice, olive oil, salt, and cinnamon, toss well. Enjoy!
