Blueberry Bars

Ingredients:

  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 2 cups oats
  • 1/2 cup water
  • 2/3 cup brown sugar or cane sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups blueberry jam

Preparation:

  1. Preheat the oven to 170°C (340°F). Grease a rectangular or square baking dish with oil.
  2. In a large bowl, mix all the ingredients except the jam.
  3. Using your hands, press 2/3 of the mixture into the bottom of the dish until it is even and relatively flat.
  4. Gently spread the jam over the mixture, leaving a 2 cm (1 inch) border around the edges (the jam will burn if it touches the edge of the dish).
  5. Using your hands, crumble the remaining 1/3 of the mixture evenly over the top of the jam, pressing lightly so the crumbs stay in place after baking.
  6. Bake for 25-30 minutes on the center rack until slightly golden on top.
  7. Cool in the pan on a wire rack. Cut and serve!
