Homestyle Mac & Cheese

Ingredients

  • ⅓ cup raw cashews (soaked, drained and rinsed)
  • 1 can coconut milk
  • ½ cup nutritional yeast
  • 2 tsp salt
  • ½ tsp onion powder
  • ⅓ cup cornstarch
  • 2-3 Tbsps lemon juice
  • 2 cups water
  • ¾ cups roasted red peppers (or pimentos or a fresh red pepper)
  • 1lb cooked whole grain macaroni

Steps

  • Step 1 Place all ingredients except macaroni in a blender and blend approximately one minute until sauce is completely smooth.
  • Step 2 Pour mixture into saucepan and heat on medium high until cheese thickens, stirring constantly.
  • Step 3 When thickened, mix with cooked macaroni.(Alternative: Once blended, pour uncooked cheese sauce directly into cooked macaroni.  Spoon into oiled casserole dish, top with favorite toppings, cover and bake at 350 degrees for 30-35 minutes. Remove cover and bake an additional 10 minutes.)
