Black Bean Salad

Ingredients

  • 2 cans black beans, drained (or 3 cups)
  • 2 cans corn, drained (or 3 cups)
  • 1 cup Edamame
  • 2 Tomatoes, diced
  • 2 Avocados, diced
  • 3-4 Tbsp Cilantro, chopped
  • 4 Tbsp Lemon juice
  • Salt to taste

Steps

  • Step 1 In a bowl combine drained black beans, corn, edamame, cilantro, lemon juice and salt. Stir until it is well combined.
  • Step 2 Gently stir in the diced tomatoes and avocados.
